for grandpa

Today a small miracle occurred. I mastered the art that some in my family might call impossible. After years of repeated trying and subsequent failures, I think I may have conquered one family secret that left us about five years ago.

The incredible feat? One simple Egg-in-a-Cup, a grandchild favorite, grandpa made breakfast staple.

Whenever any of the 6 cousins stayed at grandpa and grandma's house, we begged grandpa to make 6 perfect eggs-in-a-cup for breakfast. That was really all grandpa ever made for us, and boy, was he ever good at it!!

Years of egg-in-a-cup can sure spoil a kid and when even my mom couldn't recreate the heaven-on-earth meal, I figured grandpa was the only one on earth who knew the recipe. I also heard about the attempts of my uncle John to master the egg-in-a-cup breakfast, but those, too, failed.

I don't often like to toot my own horn, but today was truly a proud moment for me. I woke up with a craving for egg-in-a-cup.

I walked myself right into the kitchen, put three eggs on the stove to boil. One key thing to the egg, however, is to soft boil them--something that I had never done before. Two pieces of buttered wheat toast later, I had the ingredients for the breakfast of a lifetime.

Here's the recipe, as far as I can tell, that my grandpa teased us with for years. Gosh, I'm proud!

***3 soft-boiled egg (start in still water, after water comes to boil, let eggs stand for about 3-4 minutes. You still want the yolk to be runny)
***2 pieces soft buttered toast (the softer the bread, the better)
***salt and pepper to taste (it's not grandpa's egg-in-a-cup without two cups of each)
***tear bread into small chunks, cut eggs into small pieces
***you have to put it in a cup...not a bowl...and not just any cup, a coffee mug or something similar...it really makes it taste different.
***serves 1...ENJOY!!!
